This week's recipe was so easy, it almost does not deserve to be called a recipe. My source was a recipe called "Way too easy Cajun potatoes" that I fancied up a bit by adding garlic to it.
These are the kind of potatoes that you can make instead of going out - they're that quick.
Ingredients:
10 medium potatoes, washed but not peeled
2 Tbsp Cajun seasoning, to taste
2 Tbsp minced garlic
2-3 tablespoons oil (as needed)
Salt and pepper to taste
Instructions:
Pre heat oven to 425F.
Cut the potatoes into 1/2 to 1 inch pieces
Add potatoes and minced garlic to a large bowl
Pour oil over the potatoes in the bowl. (It's OK,if it's a little more than 2-3 Tbsp)
Add Cajun seasoning mix (from the store, I used Kroger brand.) to taste.
Toss the potatoes until all pieces are coated with garlic and spice.
Pour potatoes onto a large baking pan.
Spread them out on the pan so that they form a single layer.
Bake for 30 minutes, turning once.
I also made a dipping sauce to go along with it. I had about 1/2 a container of sour cream in the fridge, added Cajun seasoning, some garlic and a few Tbsp of mayonnaise. Then I blended everything together using a stick blender.
Both items were well received
